Hello! I’m Kate, and I’m the youngest of the siblings. The baby of the family, as my Mother would call me.

I live in Somerset, in the South-West of the country, with my husband and our 3 year old daughter. But I was born and raised in Kent, and also spent a few years living in Holland with my husband, before returning home to the UK. As a result, I can speak some Dutch (though I’m quite rusty now).

By day, I work in financial services, whilst my husband is the stay at home parent (and doing an excellent job!). I adore food, and my waistline will tell you, a little bit too much! 😉 By night, I love to relax with a good TV series or film. My tastes are geeky, with my favourite shows being Supernatural and The Walking Dead, and my favourite film being The Lord of the Rings trilogy. Though I also enjoy anything sci-fi!

Changing diets

I am the former fussy eater of our family (though am still quite fussy in some respects), and have worked hard to improve my eating habits over the years. I didn’t eat chicken until I was in my 20’s, and now I love it! I can’t eat cheese (intolerance) or kiwi (allergy), and my daughter also has a peanut allergy (luckily so far, not severe), as well as a raw tomato allergy (cooked is fine – no idea why).

Making meals that suit all of us, isn’t always easy, and I often have to make adaptations to recipes or a separate and slightly different version for one of us (think cottage pie without the cheese on top). Luckily for me, my husband is not that fussy and eats pretty much everything, and our daughter seems to have taken after him with the exception of egg. I have tried it every which way with her, poached, boiled, fried, scrambled, omelette, quiche – she just doesn’t like it! This somewhat limits quick and easy week night meals, so I work hard at being creative to find things she will enjoy.

And now our daughter has just started nursery, I have the added challenge of finding ways to provide her with a healthy balanced meal that a) doesn’t need to be heated b) doesn’t contain nuts c) doesn’t contain eggs and d) isn’t yet another sandwich (yawn!).  I’ve had to get creative!
