This one isn’t vegan, i’m using real eggs but I am using soya yoghurt. It’s nice on it’s own but also great with a little rice
Serves: 4
Ingredients
- 180g leek, about 1 whole leek, roughly chopped
- 250g bell pepper, about 2 whole peppers, roughly chopped
- 150g mushrooms, roughly chopped
- 6 whole eggs
- 2 cloves of garlic, crushed
- 8 sprays of sunflower oil
- 1 tsp oregano
- 4 tbsp soya yoghurt
- 0.5 tsp salt
- 1 tsp black pepper
Method
- Pre-heat the oven to 190° C / gas mark 5 (170° C fan)
- In a large frying pan, heat 4 sprays of sunflower oil and add the leeks, mushrooms, peppers, garlic and oregano; cooking for 8 to 10 minutes until softened. Season with salt and black pepper.
- Beat the eggs in a bowl then add the soya yoghurt and beat to mix.
- Spray a baking dish with 4 sprays of sunflower oil, spread with your fingers to cover the dish.
- Add the vegetables to the dish spread evenly. Pour over the egg mixture and place in the oven for 25 minutes.
Notes
Rice or sauted potatoes is good with this. I also like a bit of rocket.
